Tupperware Party II: The Burping

WELSH RAREBIT

1/4 c. butter
1/4 c. flour
1/2 tspn. salt
1/4 tspn. pepper
1/4 tspn. dry mustard
1/4 tspn. Worcestershire
1 c. milk
1/2 c. beer
2 c. shredded cheese, or ~8 oz. (usually Cheddar)
toast toast toast

Melt butter in saucepan over low heat. Blend in flour and all seasonings, including Worcestershire. Cook until smooth & bubbly. Remove from heat and stir in milk. Heat to boiling, stirring constantly to avoid burning. Boil & stir for one minute.

Gradually add beer to sauce mixture. Turn to low heat, and stir in cheese. Here the cookbook, a Betty Crocker number from 1969, points out to stir cheese until melted. It's a good idea.

Of course you can season this up however you like and play with the beer/cheese combinations. At this point you serve over toast.

Or tonight, I dipped jicama in it, which makes it a Mexican jackrabbit, I suppose. Some people add paprika as a garnish, but we are all adults here and can adjust seasonings all by our lonesome.
